The berries are carefully washed and soaked in fresh sour curd from traditional bharani jars, blended with rock salt, a pinch of salt, and a touch of asafoetida. They are then lovingly spread under the warm Palakkad sun for several days, allowing nature to work its magic. This slow sun-drying process transforms the humble berries into the flavorful and aromatic Manathkali Vathal.
